Does anyone know if you could place one's cellphone horizontally in the smartphone holder? And not have fingers blocking the screen?

All the pictures I see show a vertical phone.

It’s likely because the Slate App is designed around a 9x16 aspect ratio. Also most phone mounts are optimized for vertical orientation. We don’t know yet if you can change it to horizontal but I do think the best configuration will be vertically.

Personally hoping I can mount my iPad in landscape

I don't know that we've seen final versions of the mounts. One source said they were trying to have 1 universal phone mount, but it's also been seen as having one fixed side and one adjustable, which can be an issue depending on where the charging connection and microphone are on the phone.

I'm interested in three types of dash mounts: vertical phone, horizontal tablet (iPad), and a mount that will accept a RAM ball adapter (e.g. kayak-type gear track rail). The reason for the RAM ball is for use of a Garmin GPS for travel in areas of poor cellular coverage. I'd hate to have to mess up the dash with some type of stick-on or screw-on mounting base for the Garmin GPS.

If I get the Slate, I plan to use the T-Track system they have in place and use the RAM system to attach a MagSafe charger.
been using something similar on my Honda Fit dash to hold my two smartphones.
