would like to see a sturdy 2 inch receiver and tow/tie points both front and rear for attachment of tow hitch, winch, or light duty snow plow.

Agreed. I don't think the basic Slate will be able to tow over 1,000 lbs, so a smaller 1 1/4" hitch may be what they're thinking, however I've found that some of the hitch-mounted accessories like hitch carriers for mobility scooters, etc, REQUIRE a 2" hitch. Don't need to tow 3,000+ lbs, but need the 2" for adding the accessory.

I know you can purchase 1 1/4" to 2" adapters but that will lengthen the moment of leverage of the load far out, possibly beyond the limits of the Slate.

Better to start with a 2" hitch and get a 2" to 1 1/4" adapter keeping the hitch length a little shorter.

Yup, Have a 2" receiver, towed twice with it but we use it about 6 times a year to go camping with a hitch platform to hold our stuff.
