Does Slate truck come with a plug for a 60 amp outlet NEMA 14-60R?

Or do I have to use a 50 amp outlet NEMA 14-50?

The 50 amp plug is different from the 60 amp plug.

But it says it can be charged with a 60 amp plug at home.

It will almost certainly have a 14-50 plug, and charge at 40A on a 50A breaker. That is the de facto standard config for a L2 EVSE. More powerful units are hardwired, such as 48A EVSE on a 60A breaker, or an 80A on a 100A breaker.

The pictogram on the website shows a 14-50P which is typical for a portable L2 EVSE.
