Easy to determine, what is weight of the gallon can of coating? How many cans? Minus weight of containers. Likely a bit less after solvents gone.
I didn't want to seem the Master Of the Obvious (MOO?) by suggesting that calculus, but....

Naïve about this sort of stuff (aside from the "dip / wrap" stuff) - does it add appreciable weight?
No. I just received my 2-gallon kit from Monstaliner I ordered a few weeks ago to do my 2-door Jeep's exterior. It's shipping weight is 28 lbs. That includes the weight of the metal cans, the install tools like roller and disposable roller pads, gloves, stir sticks, brush, printed instructions and all the cardboard packing and shipping box. Once applied (rolled on wet) and outgassed and completely cured, I would bet it weighs half that at most, LOL. It's nothing.

Will bedliner adhere to the plastic surfaces?
Yes. I did my Jeep's interior with Monstaliner. The dashboard and interior panels of both doors, all plastic. Scuff and clean very well and it will adhere fine. It's been about 8 yrs since I did it and no sign of wear or peeling or color fading.

Would you say that it's more scratch resistant than the plastic underneath?

LOL, yes. Before I coated the plastic dash and door parts they always showed scratches and sun blotch. After the Monstaliner it always looks great, other than dust, of course. After a wash I'm always kinda amazed how good it looks years later. My Jeep's lined floor looks great after about 10 yrs. I cannot describe with words how tough this stuff is. I don't really see scratches on the floorboards, just a dirty matte black textured floor. You can order free color swatches from the website and scratch test them.

Here's a short YT video I just found from another satisfied customer:
